"Amego no Tsuki "is a sake brewed in "Nigata ", a small town east of Kure City, Hiroshima Prefecture, surrounded by three mountains and the Seto Inland Sea, and fed by subsoil water from the famous Mt. Noro.
It is believed that mineral-rich perfumed water is suitable for brewing sake, and Hiroshima Prefecture was not a suitable place for brewing. However, with the birth of the soft-water brewing method in 1956, brewing began to flourish in Hiroshima Prefecture and the area became famous. Some of you may know the Taketsuru Brewery from the NHK morning TV series "Massan ". The Taketsuru Brewery is a long-established sake brewery that has been in business for nearly 300 years. "It is also the birthplace of Masataka Taketsuru, the main character in Massan ". The area where the Taketsuru Sake Brewery is located is also designated as a Takehara Townscape Preservation District, making it a great place for sightseeing.



"Features of Chikutsuru "

"Taketsuru "is a Japanese sake produced by the Taketsuru Sake Brewery in Takehara City, Hiroshima Prefecture. The secret to the mellow sake lies in the clean water that is pumped out from 126 meters below the ground. Takehara's water is high in chloride ions, which bring out the umami flavor.
Takekaku Sake Brewery produces sake using the highly technical and labor-intensive "ikakeyashizukuri "process. "Because of the labor-intensive process ", the kamishimo zukuri method was abandoned for a time, but in 2004, Takeketsuru Shuzo became the first brewery in Hiroshima Prefecture to revive the method. "Yizuisuishin "is made at a brewery in Mihara, which was founded in 1860. It was born in the middle of the Meiji era (1868-1912) with the unification of about 20 kinds of sake. "The water used for Yizysushin "comes from the foot of Mt. Sosan, a mountain in the center of Hiroshima Prefecture.
