Hiroshima Prefecture, in the heart of the Chugoku and Shikoku regions, is home to many delicious restaurants. Michelin surveys restaurants undercover and publishes a red book called the Red Book. Hiroshima was surveyed in 2013 and 2018, and several restaurants received stars.
We would like to introduce three of Hiroshima's leading restaurants that have received Michelin stars, a sign of world-renowned restaurants. We hope you will try them on special occasions such as dates and anniversaries.

Seasonal Cuisine Nakashima

It is the only restaurant in Hiroshima Prefecture to be awarded three stars. This kappo restaurant is located in the Hakushima area, about 10 minutes by cab from Hiroshima Station, and is open by reservation only.

Wonderful dish!

Hiroshima Prefecture is rich in nature. These dishes are rich in the sea and mountains of Hiroshima Prefecture.

The menu changes with the season, taking advantage of seasonal ingredients, so you can experience the four seasons. All dishes are freshly baked or fried at the best timing, as if they are calculated down to the second.

The dishes are beautifully presented in dishes that match the food, and the atmosphere is a wonderful example of Japanese cuisine.

Owner's background

"Nakashima "opened on November 17, 2006 (Heisei 18) and has been a representative kappo restaurant in Hiroshima Prefecture since its opening. The owner, Tetsuo Nakajima, graduated from high school in Hiroshima and went on to a technical college in Osaka, where he trained at many famous kappo restaurants and built his career. He returned to his hometown Hiroshima and opened "Nakashima ".

A space with a special attention to detail

"Nakashima "is not only about the food, but also about the space and the utensils. There are eight seats at the counter and one table, and you basically dine at the counter. The beautiful one-panel counter that catches the eye the moment one enters the restaurant is made of Yoshino hinoki cypress, which has won a prize for excellence, and is polished so many times that it repels water. It combines a sense of luxury and warmth. You can enjoy a live cooking experience as the food is prepared right in front of your eyes. On the other hand, the table seats are made of zelkova wood, creating a relaxed space for your family only.

The tableware is also full of the owner's attention to detail. Sashimi beautifully served on Arita porcelain, the work of a living national treasure, and desserts served on Wajima lacquerware more than 100 years old, are weighty pieces.


The dishes are prepared with seasonal and local ingredients. They are carefully prepared, making the most of the flavors of the ingredients. Only courses are available, and the price is 17,320 yen including 10% consumption tax and 5% service charge.

Wonderful dish!

"Hiroto "offers three course meals by reservation only: 11,500 yen, 14,500 yen, and 16,500 yen.
The dishes are made with ingenuity, using simple ingredients with complex flavors, and are visually gorgeous and pleasing to the eye. Although each dish is small in quantity, you will be able to taste many dishes, all of which are exquisite.

The chef uses only carefully selected ingredients, allowing you to enjoy the new harmony created by the combination of ingredients. Homemade flavored oils and spices are the secret ingredients. We use mainly local ingredients, but also bring in wonderful ingredients from around the world. Our Wagyu beef stewed in red wine, a French classic, is made from the best quality Hiroshima Wagyu beef in Hiroshima. You can also enjoy other carefully selected ingredients from around the world, such as roasted black abalone and poached foie gras. Depending on the season, you can also enjoy gibier dishes.

"Hiroto "has a top-notch sommelier on staff. He will serve you wines that go well with your dishes. We have about 400 kinds of wines from various places, mainly from Europe, so it is a heavenly place for wine lovers." "Hiroto "has a relaxed yet luxurious atmosphere. Seating is available at the counter and at tables, all made of a single solid piece of bubinga wood.

The space and tableware have been meticulously designed to create the illusion of being in a fine French restaurant. You can spend a special time in a refined and elegant space.

Chef Biography

After graduating from Tsuji Culinary Institute, owner-chef Yoshiyuki Hiroto worked and trained at restaurants in Hiroshima and Tokyo. He then studied cooking at "Hibiscus ", a one-star restaurant in the UK that has been named one of the 50 best restaurants in the world "" , before returning to Hiroshima to open "Hiroto ".

This Japanese restaurant is located in Saijo-machi, Higashihiroshima City, a 5-minute walk from Saijo Station. Reservations are required, and courses are the same for both lunch and dinner. "Unlike kappo restaurants where the cooking is done in front of you, Ryouriya Sobiki "offers carefully prepared dishes. Local and seasonal ingredients are carefully used to create dishes with deep flavors. The dishes are beautifully and delicately prepared, as they consider the container and serving style to be a part of the cuisine.
The restaurant is constantly researching the best and evolving every time you visit. I recommend it because you can also feel the season of the time.

"The specialty of Ryoriyasobiki "is the main dish using rare Wagyu "Hiba beef ". Hiba beef is a top-notch foodstuff, descended from the Iwakura vine, the oldest Wagyu beef in Japan, and people come from all over the prefecture and beyond in search of Hiba beef. However, the number of Hiba beef is small to begin with, and only one or two cattle are shipped per month throughout Japan, so there are days when even "restaurant Sobiki "does not carry it. The fillet of Hiba beef is rare in the center, and the flavor of the meat spreads in your mouth as soon as you put it in your mouth. The moderate fat and lean meat without any cloying taste melts away, making it an unforgettable dish.
Each dish is full of creativity, making this a restaurant that people from inside and outside of the prefecture will want to come all the way to visit.

Marriage with Sake

"Saijo Town, where the restaurant Sobiki "is located, is famous throughout Japan as one of the country's three major sake brewing areas and is famous for its sake. Because we have a restaurant in Saijo, we continue to master the cuisine that goes well with sake.
High quality water is common to both sake and Japanese cuisine. You can enjoy the marriage of food made with water from that region and sake made with water from that region. "The water used at Ryouriya Sobiki "is directly from a spring, which shows that they are very particular about water.

Sustainable thinking

"Chef Sobiki "is committed to the idea of sustainability, and since 2021 we have been working to stop using ingredients designated as endangered species, such as bluefin tuna, matsutake mushrooms, and black bears, so that the ingredients will also be passed on to future generations.

Unusually for a Michelin-starred restaurant, we also offer take-out. There are people who want to go but cannot for various reasons, such as those who have children and find it difficult to eat out at first-class restaurants, or those who are too old to eat out. It is good for such people to be able to enjoy delicious food at home.
Seasonal dishes are priced at 10,800 yen (per person) and the wagyu beef hot pot set is 21,600 yen (2-3 persons) and can be reserved by phone.
