Mizubasho Junmai Ginjo

This sake is brewed by one of the most famous breweries in the prefecture.
When the bottle is opened, the first thing that comes to mind is the pleasant aroma.
This so-called "ginjo aroma" is produced during the fermentation process of rice, the main ingredient of sake.
It is characterized by a fruity apple and melon-like taste.
The ginjo aroma of skunk cabbage is fresh and fresh.
Skunk cabbage's aroma tends to give the impression of "sweetness," but when you put it in your mouth, it has an unexpectedly clear flavor.
Of course, there is sweetness, but it is not cloying, and the aftertaste is clean.
It is umami while in the mouth, but has a nice sharpness after swallowing.
It is such a drink.

It has a very good balance of sweetness, acidity, and bitterness, and goes well with a variety of dishes.
It is recommended not only for Japanese food, but also for Chinese and Western food.
It is suitable not only during a meal, but also for enjoying only alcoholic beverages after a meal.
It is also important to keep in mind that this sake is relatively widely distributed in the prefecture, making it easy to obtain as a souvenir.

Some skunk cabbages are "oddballs.
Some of the specials are listed below.

"Junmai Ginjo Dry Sparkling "is recommended for those who enjoy a more refreshing taste.
The aromatic quality of the wine is maintained, but it is slightly dry and crisp.
The added fun of the schwirling mouthfeel will keep you tipping your glass more and more.
How about a souvenir for those who prefer particularly dry sake?

"DESSERT SAKE ".
This bottle was aged in an ice-temperature cellar.
The taste is special because it takes more than five years to complete.
The ginjo aroma is stronger and sweeter, and the flavor is mellow.
Enjoy the rich flavor that is truly worthy of being called a dessert.
It goes well with high cocoa chocolate and salty cheeses.

Tanigawadake Junmai Daiginjo

This is another famous sake representing Gunma Prefecture.
In fact, it is brewed by the same brewery as the skunk cabbage introduced earlier.
The ginjo aroma itself is a little lighter than that of skunk cabbage, but it is still characteristically fruity.
The taste is more on the dry side.
The flavor is clean and tail-free.
The balance of sweetness, acidity, and bitterness is superb, and it goes down smoothly in the mouth.

It has a low pronounced sake character and blends well with all kinds of food.
It has a strong umami flavor but does not clash with the taste of the food, so it is a good choice for everyday dining.
This is also widely available in the prefecture and is recommended in terms of availability.

Tanigawa Dake also offers a variety of series products.
We have picked out a few that we particularly recommend.

"Tobi-Hot "is a bottle that, as the name suggests, offers an extraordinarily spicy taste.
Although it is spicy, there is almost no strong peculiarity, and the flavor is more crisp and clean.
It has a dry mouthfeel with a gentle sweetness in the back, and a refreshing aroma that lingers after drinking.
Recommended for those who prefer a particularly refreshing taste.

"Kokoro "is just a bit drier than Junmai Daiginjo.
The concept behind the brew was to "make you want to drink it every day," and as the name suggests, it is soft to the palate and has no peculiarities.
As is the case with all of the Tanigawa-dake series, this lack of peculiarities is a notable feature.
The fact that the umami and flavor are present but do not fight with the food is due to the good balance of the two.
It is truly a sake you will want to drink every day and is the pride of Gunma.

This sake can be enjoyed from cold sake to cans.
If you are not a fan of sake, please enjoy it at room temperature to lukewarm.
The taste is dry.
The aroma is somewhat less and the overall impression is clear.
The flavor is fresh and umami in the mouth, and the flavor quickly takes over as the drink is swallowed.
This bottle is especially recommended as a souvenir for those who prefer dry sake and sharp atmosphere.

The tangy taste of alcohol and its sharpness make it a perfect match, especially with Japanese food.
Enjoy it with sashimi, simmered dishes, and other seasonal ingredients.
Akagisan Special Honjozo is the most readily available of the local sake brands introduced here, and can be found in convenience stores in the prefecture.

Tokusen Katsuragawa Honjozo

Sake made by a long-established sake brewery, founded in 1877.
This sake, produced by traditional techniques, has a sweet, full-bodied ginjo aroma.
Many restaurants and inns in the prefecture carry this product, which seems to indicate that it has long been a favorite.
Like the previous three brands, this local sake is very familiar to Gunma residents.
We hope you will pick one up as a memento of your trip.
Cold sake is by far the best way to drink it.
Please try it cooled in the refrigerator.
Tokusen Katsuragawa Honjozo has a sweet taste.
Glutinous rice, which is rare in sake brewing, is used as an ingredient, and its mild umami and sweetness fill the mouth.
However, it is not as thick and sweet as dessert liquors, but rather crisp.

Tokusen Katsuragawa Honjozo is a sake that goes well with Japanese food.
Enjoy it with salty snacks such as simmered dishes for a more delicious taste.
It can be used as an aperitif or after-dinner drink as well as a food wine, and can be enjoyed on any occasion.

Katsuragawa is another sake with a series development.
This section will focus on sake with different characteristics from honjozo and other types of sake.

"The 55 degrees of the Liquor ".
This is a product made with the intention of being used as a hot can.
If you drink it cold or chilled at room temperature, you will not be able to taste the deliciousness of this sake.
The sweetness and umami of glutinous rice can be best appreciated when the temperature is warmed to about 55 degrees.
The aroma of sake becomes much richer and warms the body.
This one is recommended for the winter season.

"Endangered Liquor (Red List) "is an interesting name for this liquor.
The name was derived from the fact that the food culture has changed from the past and the original taste of local sake has been lost.
The first is the one that was
The "homogenized taste that everyone likes" is certainly tasty in the context of modern values.
However, perhaps the best part of local sake is to know the taste of the production method that has been handed down for a long time.
Why not try this one, which is sweet, but also has a gusto and spiciness?

Special special honjozo

Creating the Secret Phantom "Asama Sake Brewery "was founded in 1877.
Among the many breweries in Gunma Prefecture, this is one of the oldest.
"The sake is brewed in Naganohara-cho, near Kusatsu Onsen-kyo ", one of the three best hot springs in Japan, using rice handmade by the brewery.
This one can be enjoyed cold, at room temperature, or even can.
The taste of Higen Special Honjozo is clean and dry.
Even though it is dry, its flavor is gentle, and the sake goes down easily.
It has a gentle aroma and an excellent balance of sweetness, acidity, and bitterness.
"I would recommend this bottle to anyone who likes a light drink ".

Higen Special Honjozo goes well with vegetable dishes.
In particular, try pairing it with vegetable dishes that are slightly peculiar, such as boiled or pickled vegetables.
The distinctive smell and exasperation are mysteriously softened, and the delicious flavor is enhanced.
